Ingredients and Substitutions

The core ingredients for this stir fry are simple and can easily be substituted based on your preferences:

How to Make Sticky Chicken Mince Stir Fry

Making this stir fry is incredibly straightforward. Here’s a breakdown of the process:

  1. In a large skillet or wok, heat the vegetable oil over medium heat. Add the white parts of the spring onions, garlic, ginger, and grated carrot. Sauté for about 2 minutes until fragrant.
  2. Increase the heat to medium-high and add the chicken mince. Cook while breaking it apart with a wooden spoon until it’s no longer pink, approximately 5-7 minutes.
  3. To create the sticky sauce, whisk together the oyster sauce, honey, soy sauce, dark soy sauce, and chili flakes in a small jug or jar. Once the chicken is cooked through, pour the sauce over the chicken and simmer for an additional 4-5 minutes. Stir occasionally to prevent sticking, and cook until the sauce has thickened and coats the chicken mince.
  4. Remove from heat, and stir in the sesame oil and the green parts of the spring onions. Serve hot.

Expert Tips for Success

Variations

This dish is highly adaptable. Want to add more vegetables? Consider incorporating bell peppers, broccoli, or snap peas. You can even swap in different proteins based on availability, such as tofu for a vegetarian option or beef mince for a different flavor profile. For added texture and flavor, try including nuts like cashews or peanuts.

Serving Suggestions

This Sticky Chicken Mince Stir Fry is traditionally served over steaming jasmine rice, which perfectly complements the sticky sauce. However, you can use noodles or cauliflower rice for a lower-carb option. For an extra layer of flavor, top with sliced raw spring onions or crushed peanuts. Steamed vegetables such as snow peas or broccolini make excellent sides, providing a fresh contrast to the rich sauce.

Storage, Freezing, and Reheating

This stir fry is fantastic for leftovers! Store any unused portion in an airtight container in the fridge for up to 3-4 days. To reheat, simply microwave it or warm it in a skillet over low heat, adding a splash of water or broth if necessary. Freezing is also an option; cool completely before transferring to a freezer-safe container. It should keep well for up to 3 months.
