How to Make Easy Chicken and Potato Skillet with Broccoli

  1. Prepare the Potatoes: Start by peeling the potatoes and cutting them in half. Then dice into approximately 2 cm pieces. Cook them in lightly salted water for about 10 minutes until they are just tender. Drain and set aside.
  2. Season the Chicken: Slice the chicken breast into thin strips. Season with sweet paprika, hot paprika, salt, pepper, and garlic powder. Allow it to marinate for a few minutes.
  3. Brown the Potatoes: In a large skillet, heat 2 tablespoons of oil over medium heat. Add the cooked potato pieces and sauté for about 15 minutes until golden brown. Stir occasionally to ensure even cooking.
  4. Cook the Chicken: In a separate pan, heat the remaining oil and quickly sauté the seasoned chicken for about 1 minute. Add diced ham and continue to cook for an additional 2-3 minutes until the chicken is cooked through.
  5. Add the Broccoli: Cut the broccoli into florets. Once the chicken and ham are browned, add the broccoli, vegetable broth, and sour cream to the skillet. Mix well and let it simmer on low heat for about 5 minutes.
  6. Thicken the Sauce: Dissolve the cornstarch in a bit of water and add to the pan. Stir continuously and bring to a boil to thicken the sauce.
  7. Combine and Serve: Carefully fold the sautéed potatoes into the chicken and broccoli mixture. Sprinkle the grated cheese on top and let it melt over low heat. Allow the dish to sit for a few minutes before serving.
