Ingredients and Substitutions

How to Make Chicken Teriyaki with Broccoli and Rice

  1. Start by preparing the marinade. In a large bowl, mix together oil, crushed garlic, ground ginger, soy sauce, water, vinegar, and sugar.
  2. Cut the chicken breast into bite-sized pieces, add them to the marinade, and let it rest for at least 30 minutes to absorb the flavors.
  3. While the chicken marinates, cook the rice according to package instructions. Typically, this would involve boiling water, adding the rice, and simmering until tender.
  4. Cut the broccoli into florets and steam them for about 10 minutes in salted water until they are bright green and tender-crisp.
  5. Slice the bell peppers into rings and chop the spring onions into thin slices.
  6. Heat a large skillet over medium-high heat and add about 10g of cooking oil. Once hot, add the marinated chicken and stir-fry it until browned and cooked through.
  7. Add the sliced bell peppers to the pan and sauté for a few minutes until slightly softened.
  8. In a separate bowl, mix broth with leftover marinade and cornstarch, ensuring there are no lumps. Add this mixture to the skillet and cook until the sauce thickens.
  9. Season the dish with additional soy sauce if necessary. Finally, serve the Chicken Teriyaki over a bed of rice, add the steamed broccoli on the side, and sprinkle with sesame seeds and chopped spring onions for garnish.

Serving Suggestions

Chicken Teriyaki is beautifully served hot over a bed of fluffy rice, accompanied by steamed broccoli. You can also plate it family-style, allowing everyone to serve themselves. For a touch of freshness, consider a side salad with Asian dressing or some edamame. Pair with a chilled glass of sake or green tea for a complete experience.

Storage, Freezing, and Reheating

This dish can be cooked ahead of time and is ideal for meal prep. If you have leftovers, store them in an airtight container in the refrigerator for up to three days. When you’re ready to eat, reheat it in the microwave or a skillet with a bit of water to maintain the sauce’s consistency. You can freeze the cooked chicken and vegetables, though the texture of the broccoli may change once thawed. Store the parts separately whenever possible to preserve their flavors.
