  • 1.5 lbs large shrimp, peeled & deveined
  • 1 cup buttermilk
  • 1.5 cups all-purpose flour
  • ½ cup cornstarch
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 4-5 cups neutral oil for frying
  • ¾ cup full-fat mayonnaise
  • ½ cup sweet chili sauce
  • 2-4 tbsp Sriracha
  • 1 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • Pinch of salt
  • 3 cups cooked jasmine or basmati rice
  • 1 large cucumber, finely diced
  • 2 medium carrots, shredded or julienned
  • 4 green onions, thinly sliced
  • ¼ cup fresh cilantro, chopped
  • Lime wedges
  • Toasted sesame seeds

Instructions
 

  • Combine mayonnaise, sweet chili sauce, Sriracha, honey, and rice vinegar in a bowl.
  • Thaw and pat shrimp very dry.
  • Set up two shallow bowls for coating shrimp.
  • Heat oil in a deep pot to 350-375°F.
  • Fry shrimp in small batches.
  • Prepare rice and vegetables.
  • Toss shrimp with sauce and assemble the bowls.

Notes

For a gluten-free option, use gluten-free flour. Adjust the Sriracha to suit your heat preference.
