Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup beef or chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded mozzarella cheese

Instructions

  • In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook until caramelized, about 15-20 minutes.
  • Stir in the minced garlic and cook for an additional minute until fragrant.
  • In the same skillet, add the chicken breasts, seasoning with salt and pepper. Sear on both sides until golden, about 5 minutes per side.
  • Pour in the broth and Worcestershire sauce, then add dried thyme. Bring to a simmer, cover, and cook for 15 minutes, or until chicken reaches 165°F (74°C).
  • Sprinkle shredded mozzarella on top of the chicken, cover and let it melt for 2-3 minutes before serving.

Notes

Caramelize onions slowly on low heat for depth of flavor. Add red pepper flakes for heat. Use a thermometer to avoid overcooking. Fresh herbs can enhance flavors.
