Ingredients
  

  • 1 breast chicken sliced
  • 1 head broccoli cut into florets
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1/2 tablespoon cornstarch
  • 2 cloves garlic minced
  • 1/4 cup water
  • 1 tablespoon vegetable oil

  • Step 1: Marinate the Chicken: In a small bowl, mix the sliced chicken with soy sauce, cornstarch, and a drizzle of sesame oil. This not only adds flavor but tenderizes the meat, giving it that silky texture that’s so loved in stir fries. Let it sit for about 10 minutes while you prepare the broccoli.
  • Step 2: Blanch the Broccoli: Bring a small pot of water to a boil. Add the broccoli florets and blanch for about 30 seconds, just enough to brighten their color and soften them slightly. Drain and set aside. This step helps maintain the broccoli’s vibrant green and crisp-tender texture.
  • Step 3: Stir Fry the Chicken: Heat vegetable oil in a wok or large skillet over medium-high heat. Add the marinated chicken and cook until it turns golden and is no longer pink inside, about 3–4 minutes. Push it to the side of the pan.
  • Step 4: Add Garlic and Sauce: Add minced garlic to the cleared side of the pan and sauté for about 15 seconds until fragrant. Mix the chicken and garlic together, then add the oyster sauce and water. Stir everything to coat the chicken evenly.
  • Step 5: Add Broccoli and Finish: Toss in the broccoli florets and give everything a final stir. Let the sauce simmer for another minute or two until it slightly thickens and clings to the chicken and vegetables. Serve hot over steamed rice or noodles.

Notes

Prep ahead: Slice the chicken and broccoli in advance for quicker cooking during the week. Sauce adjustment: Taste and adjust with a bit more soy sauce or sesame oil if desired. No wok? A large skillet will work just fine—just make sure it’s hot enough before adding the chicken. Double it: This recipe is easy to scale for meal prep or feeding a crowd.
