This Chicken Bolognese is a lean and flavorful take on the classic Italian dish, using ground chicken and a rich tomato sauce that will satisfy your cravings.

Ingredients
  

  • 1 lb ground chicken
  • 1 medium onion chopped
  • 4 cloves garlic minced
  • 1 medium carrot finely chopped
  • 1 medium celery stalk finely chopped
  • 14.5 oz canned tomatoes crushed or diced
  • 1 cup red wine optional
  • 1 tbsp olive oil for sautéing
  • 2 tsp Italian herbs dried, per preference
  • to taste salt
  • to taste black pepper
  • 1/4 cup Parmesan cheese for garnish

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add onion, carrot, and celery. Sauté until softened, about 5-7 minutes.
  • Stir in garlic and cook for an additional minute until fragrant.
  • Add ground chicken, breaking it up and cooking until browned, about 6-8 minutes.
  • Pour in red wine and simmer until evaporated, about 2-3 minutes.
  • Stir in canned tomatoes and Italian herbs, then add salt and pepper to taste.
  • Bring to a simmer and cover. Cook for at least 30 minutes, stirring occasionally.
  • Serve over pasta, topped with freshly grated Parmesan cheese.

Notes

This dish can be made a day ahead for even better flavor. Use San Marzano tomatoes for the best results. Freeze leftovers in portion-sized containers for up to 3 months. Thaw overnight in the fridge before reheating.
