Creamy Cajun Chicken: A 30-Minute Weeknight Dream

Ingredients
  

  • 4 oz boneless, skinless chicken breasts about 6 oz each
  • 2 tbsp Cajun seasoning divided
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 2 tbsp butter divided
  • 1/2 cup diced yellow onion
  • 4 cloves garlic minced
  • 1/2 cup chicken broth
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley for garnish

Instructions
 

  • Pat the chicken breasts dry and season both sides generously with 1.5 tbsp of Cajun seasoning, salt, and pepper.
  • Heat olive oil and 1 tbsp of butter in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes per side, until golden and cooked through. Remove from skillet and set aside.
  • In the same skillet, melt the remaining 1 tbsp of butter over medium heat. Add the diced onion and cook until soft, about 3-4 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  • Pour in the chicken broth to deglaze the pan, scraping up any browned bits. Bring to a simmer. Reduce heat to medium-low and stir in the heavy cream and the remaining 1/2 tbsp of Cajun seasoning.
  • Allow the sauce to simmer for 2-3 minutes to thicken slightly. Remove from heat and stir in the grated Parmesan cheese until the sauce is smooth.
  • Return the chicken to the skillet, spooning the sauce over it. Garnish with fresh parsley and serve immediately.

Notes

For extra spice, add a pinch of red pepper flakes along with the garlic for an extra kick. Make it tangy with a squeeze of fresh lemon juice at the end. For the smoothest sauce, always use a block of Parmesan and grate it yourself.
