Ingredients
  

  • 4 pieces Boneless, Skinless Chicken Breasts about 6 ounces each
  • 2 tablespoons Olive Oil
  • 3 cloves Garlic minced
  • 1/2 cup Sun-Dried Tomatoes sliced
  • 1 cup Heavy Cream
  • 1 cup Parmesan Cheese grated
  • 2 teaspoons Italian Seasoning
  • Salt to taste
  • Pepper to taste
  • Chopped Fresh Parsley for garnish

Instructions
 

  • Start by seasoning the chicken breasts generously with salt and pepper on both sides.
  • Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for about 5-6 minutes on each side until golden brown and the internal temperature reaches 165°F. Once done, remove the chicken from the skillet and set aside.
  • In the same skillet, lower the heat to medium and add minced garlic. Sauté for one minute, being careful not to let it burn.
  • Add the sliced sun-dried tomatoes and Italian seasoning, stirring to combine.
  • Pour in the heavy cream, mixing thoroughly. Allow the cream to simmer gently for about 3 minutes until it thickens slightly.
  • Return the chicken to the skillet and sprinkle the grated Parmesan cheese over the top. Cook for an additional 2-3 minutes until the cheese melts and the chicken is heated through.
  • Garnish with chopped parsley before serving to add a splash of color and freshness.

Notes

For even cooking, ensure that your chicken breasts are of uniform thickness. Consider pounding them lightly for consistency. Using freshly grated Parmesan enhances flavor and improves cheese melting. Don't skip the resting stage for the chicken after cooking; this step is crucial for maintaining juiciness. Add nutritional value by incorporating vegetables like spinach or zucchini into the creamy sauce.
