Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup basil pesto
  • 1 cup sun-dried tomatoes sliced
  • ½ cup Parmesan cheese grated
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  • Start by seasoning the chicken breasts with salt and pepper. This step is crucial to building a flavorful foundation for your dish.
  • Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the seasoned chicken breasts. Cook them for about 5-7 minutes on each side, aiming for a beautiful golden brown crust while ensuring they are cooked through. Once cooked, remove the chicken from the skillet and set aside.
  • In the same skillet—where all that fabulous flavor is—you’ll want to add the minced garlic. Sauté for around 30 seconds, ensuring it becomes fragrant without burning.
  • Next, pour in the heavy cream, stirring to combine. Let the cream simmer for roughly a minute, allowing it to thicken slightly.
  • In go the basil pesto and sun-dried tomatoes, stirring until evenly mixed. Allow everything to meld together as the sauce thickens.
  • Return the chicken to the skillet and let it simmer in the sauce for another 5 minutes, igniting those delicious flavors even further.
  • Finish by sprinkling the grated Parmesan cheese over the dish. Allow it to melt into the sauce, enriching its creaminess.
  • Garnish with fresh basil before serving hot, and enjoy the delightful aromas as you dig in!

Notes

- Ensure you use chicken breasts of similar thickness for even cooking; consider pounding them to ensure uniformity. - Let the chicken rest for a couple of minutes after cooking to keep it juicy. - If the sauce thickens too much for your liking, don't hesitate to add a splash of chicken broth or water to achieve your desired consistency. - Store-bought pesto can save time, but making your own can elevate the flavors significantly and allows you to customize the herb blend.
