Ingredients
6 large eggs
1/4 cup mayonnaise
1 tablespoon gin
1 teaspoon dry vermouth
1 1/2 teaspoons olive brine
1/4 teaspoon garlic powder
Kosher salt, to taste
Freshly ground black pepper, to taste
2 tablespoons finely chopped green olives
1 tablespoon finely chopped parsley
Paprika or chili flakes, for garnish
Instructions
Place eggs in a medium saucepan and cover with cold water. Bring to a boil over medium heat.
Remove from heat, cover, and let sit for 10 minutes before transferring eggs to an ice bath.
Once cooled, peel the eggs and slice them in half lengthwise, scooping out the yolks into a bowl.
Mash yolks with a fork, then mix in mayonnaise, gin, vermouth, olive brine, garlic powder, salt, and pepper.
Fold in chopped olives and parsley, adjusting seasoning to taste.
Spoon or pipe yolk mixture back into egg whites. Garnish with olive slices and paprika.
Notes
Customize with vodka instead of gin for a different taste, or adjust olive brine for saltiness.
