Equipment

  • Medium saucepan
  • Mixing bowl
  • Fork
  • Spoon or piping bag

Ingredients

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 tablespoon gin
  • 1 teaspoon dry vermouth
  • 1 1/2 teaspoons olive brine
  • 1/4 teaspoon garlic powder
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons finely chopped green olives
  • 1 tablespoon finely chopped parsley
  • Paprika or chili flakes, for garnish

Instructions

  • Place eggs in a medium saucepan and cover with cold water. Bring to a boil over medium heat.
  • Remove from heat, cover, and let sit for 10 minutes before transferring eggs to an ice bath.
  • Once cooled, peel the eggs and slice them in half lengthwise, scooping out the yolks into a bowl.
  • Mash yolks with a fork, then mix in mayonnaise, gin, vermouth, olive brine, garlic powder, salt, and pepper.
  • Fold in chopped olives and parsley, adjusting seasoning to taste.
  • Spoon or pipe yolk mixture back into egg whites. Garnish with olive slices and paprika.

Notes

Customize with vodka instead of gin for a different taste, or adjust olive brine for saltiness.
