Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 whole lemon, juiced
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  • In a large mixing bowl, combine the olive oil, minced garlic, lemon juice, oregano, salt, and black pepper to create a marinade.
  • Add the chicken breasts to the bowl, ensuring they are well-coated with the marinade. Cover the bowl and refrigerate for at least 30 minutes (or up to 2 hours for enhanced flavor).
  • Preheat your grill or stovetop skillet over medium-high heat. Once hot, remove the chicken from the marinade, allowing any excess to drip off.
  • Cook the chicken for approximately 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown throughout.
  • Once cooked, remove from heat and allow to rest for a few minutes. Garnish with fresh parsley before serving.

Notes

For extra tenderness, pound the chicken breasts to an even thickness before marinating. Marinating longer enhances flavor; consider preparing it the night before. Letting the chicken rest after cooking ensures juiciness.
