Ingredients
  

  • 3/4 cup chicken bone broth
  • 1/2 cup heavy cream
  • 1/4 cup whole milk cottage cheese
  • 2 tbsp chopped sun-dried tomatoes (from about 4 tomato halves)
  • 2 tbsp finely grated Parmesan , plus more for serving
  • 1 tsp tomato paste
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • 4 (6-oz.) boneless, skinless chicken cutlets
  • 2 tbsp all-purpose flour
  • 1 tsp Italian seasoning
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp unsalted butter
  • 2 cloves garlic finely chopped
  • 1/4 tsp crushed red pepper flakes

Instructions
 

  • Season chicken cutlets with salt, pepper, and flour.
  • Heat olive oil and butter in a skillet over medium-high heat.
  • Sear chicken for 5-7 minutes on each side until golden brown. Remove and set aside.
  • In the same skillet, sauté garlic until fragrant.
  • Add sun-dried tomatoes, broth, cream, cottage cheese, tomato paste, and Italian seasoning. Stir until combined.
  • Return chicken to the skillet, simmer for 5 minutes, and add crushed red pepper flakes.
  • Serve with additional Parmesan on top.

Notes

Ensure chicken is patted dry before searing for a better crust. Do not overcrowd the skillet while cooking; work in batches if necessary. Adjust sauce thickness by adding more broth or cooking it down further. Check chicken's internal temperature to ensure it's fully cooked (165°F).
