Ingredients

  • 1 lb chicken breast sliced into strips for quicker cooking
  • 1 cup rice white or brown, cooked as per instructions
  • 1/3 cup honey
  • 1/4 cup soy sauce low sodium preferred
  • 4 cloves garlic minced
  • 2 tbsp sesame oil for sautéing chicken
  • 2 cups vegetables mixed bell peppers, broccoli, or carrots, chopped
  • 1 tbsp sesame seeds for garnish, optional
  • 2 green onions chopped, for garnish

Instructions

  • In a bowl, combine honey, soy sauce, minced garlic, and sesame oil. Add chicken and marinate for at least 30 minutes.
  • Cook rice according to package instructions; fluff once done.
  • Preheat grill or skillet. Remove chicken from marinade, reserving the marinade, and grill until cooked through.
  • In a saucepan, bring the reserved marinade to a boil, then let it simmer for a few minutes to thicken.
  • Allow chicken to rest before slicing it into strips.
  • Assemble bowls with rice, chicken, and drizzle with honey garlic sauce. Add vegetables and garnish.

Notes

Let marinate for longer to intensify flavor. Adjust the sauce to your heat preference. Store sauce separately to keep chicken juicy. Use a thermometer for chicken doneness.
