  • 1/2 cup onion diced
  • 2 cups lettuce shredded
  • 1 can (15 oz) beans rinsed
  • 1 cup corn heated if frozen
  • 1/2 cup ranch dressing
  • 1/2 cup BBQ sauce
  • 1/2 cup cheese shredded, optional
  • cilantro or green onions for garnish, optional

Instructions
 

  • In a small bowl, combine olive oil, garlic powder, smoked paprika, salt, and pepper. Stir until blended, creating a fragrant marinade bursting with flavor.
  • Coat the chicken breast evenly with the spice mixture. Let it sit for about 10 minutes, allowing those delicious flavors to soak into the meat.
  • Place a grill pan or skillet over medium-high heat. Allow it to warm up until hot and ready for that perfect sear.
  • Add the marinated chicken to the pan and cook for 6–7 minutes per side, or until the internal temperature reaches 165°F (74°C). Listen for that satisfying sizzle!
  • Once cooked, let the chicken rest for 5 minutes. This step keeps it juicy, ensuring every bite is tender and flavorful.
  • While the chicken rests, cook brown rice or quinoa according to package instructions. This wholesome base will nourish and fill you up.
  • Dice the onion, halve the cherry tomatoes, and shred the lettuce. Rinse the beans and heat the corn if it’s frozen, making sure everything is fresh and vibrant.
