Instructions
 

  • In a medium bowl, whisk together gochujang, soy sauce, sesame oil, brown sugar, garlic, ginger, and rice vinegar until smooth.
  • Add chicken thighs to the marinade, coating each piece thoroughly. Cover and refrigerate for at least 30 minutes.
  • Heat a large skillet over medium-high heat and add a splash of neutral oil.
  • Cook the marinated chicken thighs for about 3-4 minutes on each side, until fully cooked and charred.
  • In serving bowls, create a base of warm rice; top with the cooked chicken and arrange cucumbers, carrots, edamame, and kimchi.
  • Sprinkle sesame seeds and chopped green onions on top before serving.
