Ingredients
  

  • 1 ½ pounds boneless chicken thighs cut into strips
  • 1 cup broccoli florets
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or stevia optional
  • ¼ teaspoon turmeric
  • ¼ teaspoon black pepper
  • ¼ cup water or chicken broth
  • 1 teaspoon sesame seeds for garnish
  • 1 teaspoon xanthan gum for texture

Instructions
 

  • Preheat air fryer to 375°F (190°C)
  • Toss chicken with turmeric, black pepper, and 1 tablespoon oil
  • Air fry chicken for 6 minutes until half-cooked
  • Add broccoli to air fryer basket, season with remaining oil, garlic, and ginger
  • Air fry chicken and broccoli together for 10-12 minutes
  • Mix soy sauce, vinegar, sweetener, and xanthan gum with water/broth to create glaze
  • Pour glaze over chicken-broccoli mixture and toss
  • Air fry 2 more minutes until glazed and vegetables are crisp-tender
  • Garnish with sesame seeds before serving

Notes

Marinate chicken for 15+ minutes for deeper flavor. Use frozen broccoli if fresh is unavailable (no need to thaw). Add bell peppers or mushrooms for extra variety. Serve with cauliflower rice or extra broccoli florets for more volume.
