Ingredients
  

  • 1 ½ lbs boneless skinless chicken thighs
  • 3 tablespoons olive oil
  • 1 lemon Juice
  • 3 cloves garlic, minced
  • 1 tablespoon plain Greek yogurt
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 cup plain Greek yogurt
  • ½ cup finely grated cucumber (drained)
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill
  • Salt to taste
  • 4–6 soft flatbreads or pita breads
  • 1 cup chopped lettuce
  • 1 cup diced cucumber
  • 1 cup diced tomato
  • ¼ cup thinly sliced red onion
  • ½ cup crumbled feta cheese

Instructions
 

  • Step 1: Marinate the Chicken
  • In a large bowl, whisk together olive oil, lemon juice, Greek yogurt, garlic, oregano, cumin, paprika, salt, and pepper. Add the chicken thighs and turn to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor. The yogurt helps tenderize the chicken while the spices soak in for a rich Mediterranean flavor.
  • Step 2: Make the Tzatziki Sauce
  • While the chicken marinates, make the tzatziki. In a bowl, combine Greek yogurt, grated cucumber (make sure to squeeze out excess moisture), garlic, olive oil, lemon juice, dill, and a pinch of salt. Stir until creamy and well-blended. Let it chill in the fridge—it gets even better as the flavors meld.
  • Step 3: Cook the Chicken
  • Heat a grill pan or skillet over medium-high heat. Remove chicken from marinade and grill for 5–6 minutes on each side, until golden brown and cooked through. The edges should have a nice char, and the aroma will fill your kitchen. Let the chicken rest for 5 minutes, then slice into strips.
  • Step 4: Warm the Flatbreads
  • Briefly warm the flatbreads in a dry skillet or wrap in foil and heat in the oven for a few minutes. A soft, warm base makes all the difference in the final gyro.
  • Step 5: Assemble the Gyros
  • Spread a generous spoonful of tzatziki onto each flatbread. Top with sliced chicken, lettuce, tomato, cucumber, red onion, and feta. Fold and enjoy! You can wrap them in parchment paper to hold everything together if serving to a crowd.

Notes
