Ingredients

  • 1 lb Chicken Breast Can substitute with thighs for more flavor.
  • 1/4 cup Soy Sauce Use tamari or coconut aminos for a gluten-free option.
  • 2 tbsp Honey Can substitute with maple syrup.
  • 2 tbsp Rice Vinegar White vinegar can be substituted if needed.
  • 2 tbsp Sesame Oil Opt for a neutral oil for a milder taste.
  • 4 cloves Minced Garlic Feel free to use more for a stronger garlic taste.
  • 1 tbsp Cornstarch Key for thickening the sauce.
  • 8 oz Noodles Use your favorite type, adjusting cooking time accordingly.
  • 1 cup Vegetables (Carrot, Bell Pepper, Broccoli) Swap with any quick-cooking vegetables.
  • 2 tbsp Neutral Oil Choose vegetable or canola oil for best results.

Instructions

  • Start by thinly slicing the chicken breast into bite-sized pieces and mincing the garlic. Chop the vegetables into uniform pieces and cook the noodles as per package instructions.
  • Combine the sliced chicken, soy sauce, honey, and minced garlic in a bowl. Let it marinate for 15-30 minutes.
  • Whisk together soy sauce, remaining honey, rice vinegar, sesame oil, minced garlic, cornstarch, and a little water until smooth.
  • Heat a large wok over medium-high heat and add a tablespoon of neutral oil. Sear the marinated chicken for about 4-5 minutes until golden brown.
  • In the same wok, add more oil if necessary, then stir-fry the carrots and broccoli for about 3-4 minutes. Add bell peppers and sauté for another 2 minutes.
  • Return the cooked chicken to the wok along with the prepared noodles. Pour the sauce around the edges and toss everything together for 2-3 minutes until the sauce thickens.
  • Taste and adjust seasoning if needed. Serve warm, garnished with sesame seeds and chopped scallions.

Notes
