Ingredients
  

  • 2 breasts skinless, boneless chicken
  • 1 cup spinach, chopped
  • ½ cup low-fat cream cheese
  • ½ cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon olive oil

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine the chopped spinach, cream cheese, shredded mozzarella, garlic powder, salt, and pepper. Mix until well incorporated.
  • Use a sharp knife to create a pocket in each chicken breast, being careful not to cut through the other side.
  • Stuff each pocket with the spinach and cheese mixture, ensuring it’s evenly distributed.
  • Heat olive oil in a skillet over medium-high heat. Sear the stuffed chicken breasts for about 3 minutes on each side, or until golden brown.
  • Transfer the chicken breasts to a baking dish and bake in the preheated oven for about 20-25 minutes, or until the chicken is cooked through and juices run clear.
  • Let the chicken rest for 5 minutes before slicing. Serve hot!

Notes

Store cooked chicken in an airtight container in the refrigerator for up to 4 days. Freezing is an option; wrap chicken tightly for best results. Thaw frozen chicken in the refrigerator overnight for best quality. Make extra to enjoy leftovers for lunch the next day!
