Ingredients
  

  • 4 boneless, skinless chicken breasts or thighs
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • ¼ cup creamy peanut butter
  • ¼ cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon sriracha to taste
  • ½ cup coconut milk
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • 2 tablespoons chopped peanuts for garnish
  • 2 tablespoons chopped fresh cilantro for garnish
  • Steamed rice or noodles for serving

Instructions
 

  • Heat vegetable oil in a skillet over medium heat. Season chicken with salt and pepper.
  • Cook chicken for about 5-7 minutes on each side until golden brown and cooked through.
  • In a bowl, whisk together garlic, ginger, peanut butter, soy sauce, rice vinegar, honey, sriracha, coconut milk, lime juice, and sesame oil until smooth.
  • Pour the sauce over the chicken and let it simmer on low heat for 5-10 minutes to soak up the flavors.
  • Serve hot over steamed rice or noodles and garnish with chopped peanuts and cilantro.

Notes

For an extra depth of flavor, marinate the chicken in the peanut sauce for at least 30 minutes before cooking. Feel free to add vegetables like bell peppers or broccoli to the pan while cooking for added nutrition.
