Ingredients
  

  • 4 pieces boneless, skinless chicken breasts or thighs
  • ¼ cup creamy peanut butter
  • ¼ cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • ½ cup coconut milk (or regular milk)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons vegetable oil
  • Sriracha, to taste (optional)
  • Chopped peanuts and cilantro for garnish

Instructions
 

  • Prepare all ingredients by mincing garlic and ginger.
  • Heat vegetable oil in a skillet over medium-high heat. Add chicken and cook for about 5-7 minutes per side until browned and cooked through. Remove from skillet.
  • In the same skillet, reduce heat to medium and sauté garlic and ginger until fragrant (1-2 minutes).
  • Stir in peanut butter, soy sauce, rice vinegar, honey, sriracha, coconut milk, lime juice, and sesame oil until smooth.
  • Return chicken to skillet and coat with the peanut sauce. Let simmer for about 5 minutes.
  • Serve hot over steamed rice or noodles, garnished with chopped peanuts and cilantro.

Notes

For extra flavor, marinate the chicken in the peanut sauce for at least 30 minutes before cooking. Customize the heat level by adjusting the amount of sriracha to your preference.
