Ingredients
  

  • 2 tablespoons peanut oil
  • 500 grams chicken breast cut into bite-sized cubes
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 medium bell pepper sliced into strips
  • 200 grams broccoli cut into florets
  • 100 grams peanut butter natural and unsweetened
  • 200 milliliters coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or maple syrup for a vegan option
  • 1 teaspoon lime juice freshly squeezed
  • Salt and pepper to taste
  • fresh cilantro for garnish

Instructions
 

  • Cut the chicken breast into bite-sized cubes and season with salt and pepper.
  • Heat peanut oil in a large skillet over medium heat. Add chicken and cook until golden brown, about 5 to 7 minutes. Remove chicken and set aside.
  • In the same skillet, add onion and garlic. Sauté until the onion becomes translucent and tender.
  • Add bell pepper and broccoli. Cook for an additional 5 minutes until vegetables are tender yet crisp.
  • Stir in peanut butter, coconut milk, soy sauce, honey, and lime juice until the sauce is smooth and creamy.
  • Return the chicken to the skillet. Mix well and let simmer on low heat for about 5 minutes, allowing flavors to meld.
